French Toast is an oldie but a goodie, and one that I love to make as healthy-ish as possible… You can use any old fruit you have hanging around. My fave stewed fruit has to be plums – their tart, rosy deliciousness, paired with natural yoghurt; they have to be the perfect accomplices to the frenchies. Apples, Apricots, Pears, Nectarines, Cherries, Raspberries, Rhubarb the list is endless and each are as perfect as the next for this recipe!
French Toast with Stewed Plums

Stewed Fruit
Pop – a few Plums/Apricots/Apples in a pan
Add – a little water and a teaspoon of sugar
Cook – until the fruit has collapsed and is a loose, jam-like consistency
4 Slices of Bread (don’t be scared to use the healthier low GI multigrain breads)
2/3 Eggs (depending if you want a wee bit more protein)
Dash of Milk
Butter
Stewed Fruit
Natural Yoghurt
Whisk – eggs and milk together
Dip – bread into egg and milk
Allow – the bread to really soak up the mixture
Melt – butter in a non-stick pan
Fry – bread in the butter until cooked through
Pop – bread on a pretty plate
With – lashings of stewed fruit and yoghurt
For – true decadence sprinkle with icing sugar… a bit fancy pants.
