Sugar Free Granola

Granola has to be one of my most favourite breakfasts. I adore the crunch, I adore the roasted flavour, and I adore the chewy candy sultanas and apricots. And what’s fantastic is it’s little bit special and very easy.

4 Cups Rolled Oats, 100g Whole Almonds, 120g Sunflower Seeds, 120g Pumpkin Seeds, 5 teaspoons Wheat Germ, 1/2 cup of Apple Juice (I have used orange juice too), 4 tablespoons Coconut Oil or Sunflower Oil, Sultanas and Apricots.

Mix everything together except the sultanas and apricots. Lay the mixture evenly over a tray and cook on a low oven (160c) for about 50 mins. It must be turned continuously. Keep an eye on it and when it starts to brown, pop the sultanas and apricots in. Keep moving the mixture around and as soon as the sultanas start to balloon (only 10 mins of so – keep an eye on them they burn very easily), remove the granola and allow to cool. Pop into a pretty jar.

Eat with yoghurt, fresh fruit, milk or by itself. Relax.
