Desiree, Pink Eye, Kipfler, Pontiac, Sebago – the list goes on and on. Get a collection of different types for a beautiful colorful display when eating. No, don’t peel them all the time. Just give them a good wash before cooking, and eat skin and all! It’s important to know which variety of potato is good for different types of cooking. Floury potatoes are good for baking, mashing, gnocchi and chips, while the waxy varieties are better for boiling and salads.
