Quinoa, olive, cucumber, pomegranate and parsley salad – squeeze of lemon juice and a spatchcocked chicken on the bbq. I love summer. I love the beach. Blessed.
2 Cups Cooked Quinoa
1/2 Cup Halved Olives (I like olives with pips that I then de-pip)
1 Lebanese Cucumber Roughly Peeled and Chopped
1 Pomegranate
1/2 Bunch Parsley Chopped
(you can even sprinkle some feta on top)
Pop – all ingredients into a bowl
Slight – stir
Drizzle – Olive oil, squeeze of lemon and and pinch of salt
