Christmas wouldn’t be complete without my mama’s shortbread. So bloody easy! They’re freakin’ delicious kids so let’s get cooking and secretly eat them all up like little piggies! Did I just give myself away? Yes, let it be known I am a little piggy when it comes to shortbread.
My Mum’s Shortbread Recipe:
225g Plain Flour
115g Rice Flour
115g Sugar
A pinch of Salt
225g Butter
Rind of 1 Large Lemon
Pop – plain and rice flour, sugar, salt, butter and lemon rind into a bowl
Either – rub in butter with your fingers
or
Use – a mixer until all ingredients are combined
Pop – onto a floured bench and knead briefly
Roll – out dough to a 1/4 inch thick and cut rad shapes with cookie cutters
Place – on greased or lined tray
Bake – 160 degrees celcius for 15-30 mins depending on what shapes you chose
The – shortbread must be cooked but pale
Allow – to cool
