Daylesford Farmers Market and a Delicious Winter Salad

Farmers markets are so. in. right. now. And I’m following the trend like a little lemming! The Daylesford Farmers Market is held on the first Saturday of the month, and so off I trot to buy my goodies! The organic vegies and free range eggs are my pick of the stalls…

But what melts my little heart is the animal petting yard, they had little piglets and bunnies! Piglets. And bunnies! Ahhh! (insert girlie squeal of delight here please!) Anyway, after I pulled myself together and convinced myself that it is a necessity to get my own piglet and bunny, that arvo I made a delicious roast vegetable, rocket, and pine nut salad.

This salad is really all about what’s in season and whatever you can find at your local market or is in your garden. Chopping the vegies into your own random shapes makes for a really rustic looking salad and a special lunch!

Roast Vegetable Salad with Rocket and Pine Nuts

1 Swede cut up
1 Beetroot cut up
1 Parsnip cut up
1 Fennel sliced
Few slices of Pumpkin
Good Handful of Rocket
1/4 cup of pine nuts
Olive Oil
Balsamic Vinegar
Salt/pepper

Chop – all the vegetable (except rocket) into different sizes
Drizzle – with olive oil and salt
Roast – them in a pan for about 1/2 an hour in a moderate oven (or until soft)
Meanwhile – pop a little olive oil in a pan
Pop – pine nuts in and cook quickly to warm and brown a little (be careful they burn easily)
Place – all roasted veg, rocket and pine nuts in a bowl
Drizzle – with balsamic and salt and pepper to taste
Combine – gently
Place – onto a special plate
